Creamygirl Dressing


One of my absolute favorite snacks has to be just raw veggies. They're crunchy, light, and full of nutritional goodness. BUT if there's one thing I love, it's dipping sauces..
This is what I have been mixing up to dip whatever I feel like munching on at the moment:

2 Tbsp. Fat-free Ranch dressing
1 tsp. Horseradish mustard**
1 tsp. grated Parmesan cheese


That's it! Dunk away :)
**You can use regular mustard, but the horseradish gives it just a small kick to prevent it from tasting like regular ranch dressing without setting your entire mouth aflame

Recommendations for dunkers:

carrot sticks
celery sticks
cabbage or lettuce (cabbage stays longer in my fridge)
mushroom slices
cherry tomatoes
radishes
raw cauliflower or broccoli florets

Pumpkin Pie Pudding


Well, it IS getting to be the holiday season, and I don't know about you, but my mind has been on pumpkin..
Canned pumpkin that is simply 100% pure pumpkin puree is relatively low in calories, high in fiber and even has some protein! This is my take on a pudding that will make you SWEAR you're eating homemade pumpkin pie filling:

1/3 cup 100% pure pumpkin
dash of salt
dash of nutmeg
1/2 tsp. cinnamon
1 tsp. Instant Vanilla Jell-O mix
1 tsp. Splenda
1/6 cup milk


Per the usual: Stir and enjoy!!
For 50 calories, you got kick-ass pie filling on your hands..Snack away

And since I never like to let people follow a recipe as is without adding something of their own, here's some ideas on changing it up a bit:

2 Tbsp. whipped cream
1/2 tsp. cloves
1 tsp. pumpkin pie spice instead of nutmeg and cinnamon**


**The reason I didn't use pumpkin pie spice in my recipe is because I can buy nutmeg and cinnamon in bulk for waaaay cheaper, and since pumpkin pie spice is simply a combination of cinnamon, nutmeg, allspice and cloves, I didn't see the harm. Feel free to use the pre-made spice, though, if you like!

Cheesecake "Pudding"



This is my latest invention, an ode to cheesecake that has so much protein and all of the flavor, yet almost none of the fat or sugar of regular cheesecake.

In a little serving cup (mine are about 1/2 c.) mix together:

1/3 cup plain nonfat yogurt
dash of salt
1 1/2 tsp. Instant Cheesecake Jell-O mix
1/2 tsp. Splenda
1/2 tsp. cinnamon
1/6 cup milk (just fill the cup most of the rest of the way)

Stir and enjoy :)
Made with 1% milk, each serving has about 70 calories. Snaktastic..

Of course, this can also be made more entertaining by adding any of the following:
1 Tbsp. cherry pie filling
1/2 tsp. pumpkin pie spice
1 tsp. chocolate sprinkles
2 Tbsp. whipped cream
1 Tbsp. mini chocolate chips
1/4 tsp. almond extract

Hey all, and welcome to my new blog!
I've decided that since one of my favorite ways to eat is by making the craziest mixtures that no one believes would be good, but are actually..snaktastic..I would start a blog dedicated to all of these crazy inventions that just might surprise you. Those of you that have ever seen me fix myself a snack know what I'm talking about. I can never resist mixing things that sounds like they would go good together or changing something to my liking.
I'll post my recipes as they strike me, including ones that I've hooked myself on in the past, only weaning myself off by finding other, more bizarre recipe ideas..Many of the recipes are for the sweet-toothers like me that want something sweet and satisfying, yet healthy so you feel GOOD after you snack - a must for all of those students out there living from coffee cup to coffee cup. The three criteria for any of my snacks are that they're:
1) Healthy
2) Quick to prepare and
3) Cheap
After all, where's the fun in eating expensive pre-made snacks, ones that took you forever to prepare, or ones that weren't even good for you?
