
Well, it IS getting to be the holiday season, and I don't know about you, but my mind has been on pumpkin..
Canned pumpkin that is simply 100% pure pumpkin puree is relatively low in calories, high in fiber and even has some protein! This is my take on a pudding that will make you SWEAR you're eating homemade pumpkin pie filling:
1/3 cup 100% pure pumpkin
dash of salt
dash of nutmeg
1/2 tsp. cinnamon
1 tsp. Instant Vanilla Jell-O mix
1 tsp. Splenda
1/6 cup milk
Per the usual: Stir and enjoy!!
For 50 calories, you got kick-ass pie filling on your hands..Snack away
And since I never like to let people follow a recipe as is without adding something of their own, here's some ideas on changing it up a bit:
2 Tbsp. whipped cream
1/2 tsp. cloves
1 tsp. pumpkin pie spice instead of nutmeg and cinnamon**
**The reason I didn't use pumpkin pie spice in my recipe is because I can buy nutmeg and cinnamon in bulk for waaaay cheaper, and since pumpkin pie spice is simply a combination of cinnamon, nutmeg, allspice and cloves, I didn't see the harm. Feel free to use the pre-made spice, though, if you like!
